Wow, this was one of the more popular threads. What the heck happened?
I made a pan of ziti tonight but it's for the weekend. I thought I'd want to make myself a small bowl for dinner but I sampled enough to call it a small meal for the night. Now it's time for ice cream.

Making Cheddar/Bacon Hamburgers for dinner tonight. I've been craving a burger all week long.

Now then, what the heck is a bifteki gyro? Beefsteak? There's a Greek place somewhere near me (the only decent Greek place around here), and I'm considering this.

My parents are back from their trip to Africa, so the Friday Cocktail Hours have resumed! I'm sure I'll here lots of stories and look at lots of photos whilst having snacks.

As for what I ate, I have an unsettled stomach so I warmed a can of Progresso Chickarina soup and sprinkled some Pecorino Romano on it. Not bad.

I used to hang out with a bunch of Kenyans. They'd always tell me that there was lots more to it than just the wildlife. However, that's wot it's most remembered fer.

I go for a more reddish to pink sauce, mainly because I love the paprika and sour cream.

Here's the recipe I use. It's a bit involved, but worth it. You can use either whole chickens or just the dark meat. I prefer the dark meat just because I like a softer meat for the dish. For vegans, you can augment the recipe and use varietal mushrooms as an alternative.
Recipe: Paprikas Csirke
Makes 4 to 6 servings
Prep Time: 30-45 minutes
Cook time: ~ 1 1/2 hours
2 whole chickens cut up into parts (breasts, thighs, legs, wings)
or 4.5 pounds of dark meat parts (thighs and legs only)
2 medium onions, sliced paper thing, about 3 cups
2 medium green peppers, chopped roughly
1 or 2 medium tomatoes cut into eighths
1/4 cup Hungarian sweet paprika (more for a fuller flavor. For a spicer bite, add some hot paprika, but know your preference as hot paprika can leave your mouth begging for water and milk.)
2 tablespoons flour
1 large bay leaf
Salt
Pepper
2 to 2 1/2 cups sour cream
2 tablespoons unsalted butter
1 tablespoon vegetable oil
2 to 3 cups chicken stock
Directions:
Wash and dress the chickens, deboning breasts. Do not remove the skin or any fat.
Lay out the pieces and generously season with salt and pepper.
Heat the butter and oil over medium-high flame in a large, heavy-bottomed pot or skillet. Add the chicken pieces a few at a time and brown on all sides about ten minutes per batch. Remove to a platter.
Add the onions and peppers to existing liquid. Sauté the onions until wilted and just beginning to brown, about ten minutes. Stir in the paprika and flour and cook for another 1-2 minutes.
Whisk in the stock, breaking up any lumps. Add the browned chicken pieces and salt and pepper well. Bring to a boil, then reduce heat to low, cover and simmer for 25-30 minutes, or until the chicken is cooked through and tender.
Remove the chicken to a platter and skim any excess fat from the sauce. Reduce the sauce until thick, almost pasty. Stir in the sour cream. Adjust seasoning and reheat over low flame. Return the chicken to the sauce and serve hot.
Garnish with tomatoes.
A side dish the goes nicely is German dumplings or speitzle. A wine to pair would be Bull's Blood.
